How about some Simaa ja Tippaleipiä for your Vappu festivities? (So what is this vappu? Don't you remember? It's the first day of May, when all the white ylioppilas caps are brought out, some looking rather yellow, and donned by all those who have earned the high rank of ylioppilas. And remember those vappuhuiskat, looking rather like cheer-leading pom-poms . . .)
Mix well in the bottom of a large mixing bowl:
1 pkt of dry yeast
1 Tbsp. sugar
1 tsp. salt
Add:
4 well beaten eggs
1 c. lukewarm milk
1 lb. flour
Let rise well.
Heat oil in a large pan for cooking the tippaleivät. Using a cake decorator with a large tip or a paper funnel, squeeze batter into hot oil, forming criss-crosses. Let brown lightly. Turn over with a strainer spoon and finish cooking. Roll in caster's or powdered sugar and serve immediately with cold sima. Hyvää ruokahalua!
